Probiotic Coconut Chia Pudding with Pineapple and Mint

Breakfast by Head of Kitchen at Eden Health Retreat Georgia Barnes

Start your day with a vibrant, colourful, nourishing breakfast that’s as simple as it is delicious. This Coconut Chia Pudding was created by cook, educator, nutritionist and Head of Kitchen at Eden Health Retreat Georgia Barnes. Her lifelong obsession with cooking and passion for simple, wholesome food has led her through a career of incredible accomplishments.

This recipe has been adapted from Eden’s eBook A Taste of Eden, which includes 25 of the retreat’s most loved recipes for breakfast, lunch, dinner, and everything in between. This version uses Tonic One as a sweetener and provides the additional boost of probiotics to further aid easy digestion and optimise overall wellbeing.

This probiotic coconut chia pudding contains Tonic One to help aid digestion.

Serves: 4

Gluten free | Dairy free | Egg free | Grain free | Nut free

Ingredients

1/3 cup Chia seeds
400 mls Organic coconut milk
60 mls James Wellness Tonic One
1 tablespoon Pure vanilla extract
3 large Mangoes, peeled and diced, OR
1 large Pawpaw or Papaya, peeled and diced
1 tablespoon Fresh lime juice
1/4 Pineapple, peeled and diced
1 tablespoon Mint leaves or micro mint

Optional: Freeze dried pineapple

Method

  1. Mix chia seeds, coconut milk, Tonic One and vanilla together in a mixing jug. Pour into 4 serving glasses or jars. Place in the refrigerator to set for 15-20 minutes.
  1. Meanwhile, purée 2 of the mangoes or half the papaya with the lime juice in a food processor until smooth. Evenly pour over the chia mixture.
  1. To serve, mix together remaining mango or papaya, pineapple and mint. Place a generous spoonful of pineapple mixture on top of the purée. Serve chilled.

Tip from the chef: Chia pudding can be prepared the day before, so provide your body with premium nourishment even on the busiest of mornings!
